我本身的烤法可能跟別人不太一樣
1.蝦子泡鹽水,讓蝦子比較沒有活動力,清洗處理起來不會被夾
2.蝦子洗乾淨,如果是長鐵叉的話,頭尾各一隻,好翻面(母蝦10P公蝦7P一串)
3.用手抓鹽巴在串好的蝦子上塗厚厚一層,務必填滿蝦與蝦之間的空隙鹽可以導熱
這樣上下才會熟
4.烤爐底下會有接掉下來鹽巴的鐵盤,將它裝約1/3的水
5.剛開始單面變紅翻面,另一面也變紅再翻面,此時可以看到朝上的那面因為下面裝水
的關係,上面會附著水氣,將水氣烤乾即可換面,正反各烤4-5次就可裝盤
6.裝盤前請把蝦子上的鹽巴敲掉,會很鹹不是蝦肉鹹,是鹽巴沾到你的手後再沾到蝦肉
所以你會覺得鹹
7.將鐵叉旋轉幾圈他會變成很好抽
8.下面鐵盤很髒的......我都送廚房料理
9.蝦子烤太熟不只殼難剝,肉會粘在殼上外,還會有一種不知道怎麼形容的味道
